Viognier Cask has landed, Cape Byron Single Malt Whisky

The third whisky released by the rainforest distillery in Byron Bay, Viognier Cask combines whiskies matured for over three years in Australian white wine casks and American oak ex-bourbon casks.

Viognier wine is often found in French wine blends and is considered one of the world’s most textural white wines with a heady perfume and exotic fruit characters. The Viognier casks are sourced from Inkwell wines, McLaren Vale. the French oak casks have delicate characters of white peach, ginger and bergamot which show through on the sophisticated style of Australian whisky.

“Our whisky lives and breathes the conditions of the dense subtropical rainforest here in the hinterland of Byron Bay,” Cape Byron distiller and co-founder Eddie Brook says.

“Our barrels have lay wait within the rainforest and take in all of the elements throughout their maturation. We have something truly unique here”.

Viognier Cask is the first of a series of “small batch” style whiskies that the distillery plans to release over the next 12 months. The wine casks have been sourced from certified organic wine producer, Inkwell wines from McLaren Vale and American oak ex-bourbon casks.

This small batch will see only 1,100 bottles hitting shelves, just in time for gift-giving season.

Since launching 2022, Cape Byron Whisky has received a host of international awards including ‘Platinum, Best of Class’, at the SIP awards, a consumer-based competition and ‘Best New Launched Product’, Australian Liquor Industry Awards (ALIAs) 2023 and Gold Medals at San Francisco Spirits Competition & The Ultimate Spirits Challenge USA.
