Impress your Valentine with this Bailey’s chocolate mousse recipe


Whether you are celebrating Valentine’s, Galentine’s or simply some self-love this year, why not treat yourself and your loved one with a decadent Baileys Original Irish Cream dessert?

This marvellous mousse recipe has arrived just in time to add that romantic spark to your next treat.

Baileys Dreamy Chocolate Mousse

Makes 4, Preparation: 15 mins, Chill between 3 hours or overnight

  • 200ml Baileys Original Irish Cream
  • 2 medium eggs, separated
  • 150g dark chocolate, chopped
  • 1tsp unsalted butter
  • 250ml double cream
  • White, milk and dark chocolate chips and shavings
  • Chocolate wafer sticks to decorate


  1. Melt the chocolate, allow to cool slightly then beat in the egg yolks and butter.
  2. Lightly whip the cream and Baileys. Then fold half into the chocolate.
  3. Whisk the egg whites until just stiff, now fold with the chocolate mixture.
  4. Spoon half the chocolate mousse into 4 glasses, followed by the chocolate chips and then half the cream.
  5. Repeat the layers and top with the remaining chocolate chips and wafer sticks.
  6. Leave to set for at least 3 hours.
